Sea bass, moringa crisp, spinach, sabayon moringa

SERVES 4 PORTIONS


Ingredients

150g x4 fillet of sea bass
20g olive oil
5g moringa
Pepper and salt

Vegetables
80g butternut squash
1 sweet onion 
100g zucchini
1 stem of spring onion
100g fresh baby spinach
1 clove of garlic

The potato
2 potatoes
3g moringa
Some olive oil / butter
Pepper and salt

Cheese crisp
Zucchini spaghetti
½ yellow zucchini
½ green zucchini
Olive oil
White wine vinegar
1 teaspoon sugar
Lime zest 
Lime juice

Method


Zucchini vegetables & spaghetti

Cut long strands of zucchini and marinate in olive oil, white wine vinegar, sugar, zest and juice of lime.

Let marinate well and mix the 2 colors of zucchini well.

Dice the vegetables (butternut, zucchini, pipe onion, sweet onion) and sauté in olive oil until al dente and sprinkle with moringa and season with pepper and sea salt and finally add the spinach and let it gently melt away.


The potato

Cut small slices of potato and boil in salted water for 2 min.

Fry the potato on the underside slightly crispy in butter and olive oil, season well with sea salt and place the small slices on top of each other and sprinkle with moringa just before serving.

Cheese crisp

50 gr egg white
75 gr parmesan cheese
40 gr butter
40 gr water
50 gr flour
4 gr salt
1 gr moringa

1 knife point raz al hanout

Mix all ingredients together and mix well, spread this dough in silicone baking mat (with the shape of your choice) and bake in the oven for 7 min at 175°C golden brown.

 

Sauce

2 egg yolks
1 dl bisque
50 gr butter

Whisk the egg yolks with the bisque and assemble with melted butter.
